“The leafy top of a celery stalk must first be broken from the edible portion; the remainder is then dipped into salt, and small mouthfuls are bitten off as desired. Celery tops . . . should never be strewn or piled on the tablecloth besides one’s plate, but placed on one’s plate and to one side if the plate is crowded with food.”
